Open-6 date wheels were used on many Rolex models until at least the late '80s. (Even my '88 DJ has one.) I'd assume the 16800 you're looking at has a service date wheel, which might not be a deal-breaker for me, although I fully understand why you'd want one.

The GMT-Master ref. 16700 date wheel has vintage-style “open 6” numerals up until 1992 when Rolex switched it out for closed ones.Here is the general progression of the date wheels based on year and distinguishing characteristics: Early 1960’s to Middle 1960’s: round 3, closed 6 & 9, and flat 7. Middle 1960’s to Late 1960’s: round 3, closed 6 & 9, and hooked 7. Early/Mid 1970’s: flat 3 and open 6 & 9. Then, take your time to find period correct date wheel which you can fit at service or at your convenience. I can understand you wanting the open six and nine to complete the watch’s original look.
